Baked New Zealand Red Snapper with Lime, Chilli & Fresh Herbs
Cook a healthy, light and simple meal with a fresh whole fish – New Zealand Red Snapper that is!
Baked New Zealand Red Snapper with Lime, Chilli & Fresh Herbs
Serves 2
Ingredients
500g (1 lb) fresh New Zealand Red Snapper, scaled and gutted
1 lime, sliced
1/2 long red chilli, sliced
6-8 golden grape tomatoes, halved
1 large handful of fresh basil and coriander leaves
Rock salt and pepper to taste
Celery micro greens to garnish
Directions
On a large piece of foil, place a few slices of lime and half the basil and coriander leaves. Place the fish on top. Add the rest of the lime, basil, coriander and chilli to the top of the fish. Scatter the halved grape tomatoes around the fish.
Sprinkle salt and pepper to taste. Wrap the foil around the fish to make a tight seal. Refrigerate for an hour if desired to let the flavours infuse.
Preheat the oven to 180 C (350 F). Bake for 30 minutes. Garnish with a few celery micro greens and serve with a fresh garden salad.
Celery micro herbs can be hard to find. A small amount of regular celery leaves diced will substitute nicely.
