Hot Wings with Blue Cheese Mayonnaise


When I lived in North America, there was a great little micro brewery that did a 30c wing night! Wings and beer make for good times. Here in Australia, we don’t really ‘do’ wings like NA does. Something which I didn’t realise until Matt pointed it out to me. We have wings every couple of months when we have bulked up on enough of the them to make cooking them for dinner worthwhile. As we only buy whole chickens and cut them up into their various cuts, it does take us a while to have enough in the freezer.

Matt has experimented a few times with different sauces but his favourite is Franks Red Hot, which is mere impossible to find in Australia. As we do work with a lot of North Americans, a bottle shortly appeared from a recent trip back home and so this time round Matt combined Tomato Ketchup and Franks Red Hot for the sauce that smothers our wings!

Each recipe has been a trial and has tasted different but good each time. I apologise if this recipe is a bit loose, but it really is hard to get wrong! I hope these guidelines will give you enough direction to make it work, but the freedom to make it your own!

And lastly to all my work mates, we have been talking about it for a while now – I hope this give you inspiration for the ‘wings night’ we have to plan!

Hot Wings with Blue Cheese Mayonnaise


24 chicken wings
Your favourite tomato based sauce
Franks Red Hot (or other hot sauce you have on hand)
Whole egg mayonnaise

Small block of blue cheese
Carrots, peeled and cut into sticks
Celery, peeled and cut into sticks

Lay out the wings onto a baking tray at bake on medium heat (about 180 C or 375 F) for one hour. Meanwhile combine your sauces together in a sauce pan and bring to the boil on medium heat and let simmer for 5 minutes. Make enough sauce to generously cover your wings (about 1 cup). Remove from the heat and cover to stay warm.

Using about 1/2 – 2/3 cup of mayonnaise, crumble the blue cheese through the mayonnaise and stir. (Depending on the strength of cheese you buy, you may want to add lots or a little to fulfill your palate). Transfer the mayonnaise to dipping bowls and place onto a plate with the celery and carrots.

Remove the wings from the oven and combine with the sauce. Place all elements on a large tray and serve with napkins for those sticky fingers!
